Made from Rocoto Peppers.

Rocoto's grow in higher elevations in the Andes from Chile to Colombia, and in Central America, Mexico and Peru. They are the only pepper in the world to have black seeds and their thick walls resemble that of a bell pepper but pack much more heat. Ringing in at 30,000-100,000 SHU on the Scoville scale, Rocoto peppers are unique with hints of apple.

A very bright, vinegar based sauce with balanced flavors of apple, honey, dijon, and warm cinnamon.

Try it mixed into salad dressing for a spicy kick. Drizzle it over sweet potato fries, roasted veggies, burgers and salmon. You can even add a splash or two to Hot Toddy's and chai.
