Peanut Butter Patty Stuffed Cookies
It’s that time of year when Brownies and Girl Scouts are selling those delicious little boxes of cookies that we all love to devour. They patiently wait near the supermarket as customers try and squeeze by, they come knocking on your door with a wagon filled with cookies, and they push their product through friends and family. The Girl Scouts are everywhere, and they want you to eat their cookies.
And to be honest, who can resist? Almost no one is safe from a box of Thin Mints, Peanut Butter Patties, or Caramel Delights. And those who do try to steer clear are often thwarted by the Girl Scouts themselves, who use their years’ worth of sales experience - and overall cuteness factor- to get people to crack. But caving in to the cookies isn’t such a bad thing. The sales are for a good cause; the proceeds help to fund different trips and activities for the girls to enjoy. So, as you consume your guilty pleasure, you’ll also put a smile on a kid’s face, while helping them earn some scout badges. It’s a win-win!
One of my favorite cookies is the Peanut Butter Patties. Peanut Butter Patties are crispy vanilla cookies layered with peanut butter and covered with chocolate. As if they aren’t delicious enough, I found a recipe which incorporates these delicious little treats and makes them even more incredible: Peanut Butter Patty Stuffed Cookies. Basically it’s a cookie within a cookie. One is about all you can eat at a time because they’re so rich and fairly large. They’re so yummy that I plan on stocking up on extra boxes of Peanut Butter Patties to make this recipe again and again!
Ingredients:
3/4 cup butter, softened
½ cup peanut butter
¼ cup sugar
¾ cup brown sugar
1 box (3.4 ounces) instant vanilla pudding, dry
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
2 ¼ cups flour
½ cup mini chocolate chips
2 boxes of Girl Scout Peanut Butter Patties
Directions:
Preheat the oven to 350º F.
In a large bowl, cream the butter, peanut butter, sugar, and brown sugar together. Add the vanilla pudding mix, and beat until incorporated.
Beat the eggs and vanilla extract until combined.
In a small bowl combine the flour and baking soda. Slowly add this mixture to the wet ingredients until all the ingredients are well incorporated.
Stir in the mini chocolate chips until they are all mixed into the dough.
Lay the Peanut Butter Patties upside down on an un-greased cookie sheet. Roll the dough unto small rounded teaspoonfuls and place a ball of dough on top of each Peanut Butter Patty. Flip the Peanut Butter Patty over and place another ball of dough on top of it. Press both balls of dough together around the cookie and seal the dough together, enclosing it. Round the dough into a circle shape around the enclosed Peanut Butter Patty. I put less cookies on each cookie sheet as they were bigger in size than a normal cookie dough ball.
Bake for 9-11 minutes or until the cookies are golden brown.
